Gotta eat like a runner

With the start of marathon training less than two weeks away, I figure that I better start getting into the habit of eating right.

No more Pei Wei. Chipotle. Gyro House. Pot Belly's. Dominos. Chick Fil-A. Railhead Bar-B-Q.

OK. I won't eliminate that stuff completely. But I know I need to start preparing more meals and not eat out so much. I run better when I eat clean, especially when I eat clean the night before a hard workout or a run longer than 90 minutes. Now, I'm not gonna go vegan like one of my blogging friends, but I need more veggies.


To get myself ready, I went to the Tom Thumb on Hulen Street Sunday and bought a lot of groceries. You know, fruits. veggies. whole wheat breads. Wine. (Hey, no way I'm gettin' rid of that stuff).


I had baked chicken and new potatoes Sunday. It was the first time I'd ever made new potatoes, and I'm sure they'll be better next time when I remember the rosemary and don't leave them in the oven as long as I did. (A little crunchy - if anybody's got a good recipe, I'll take it.)

I brought soup to work Monday morning. It was a Tom Thumb brand, tortilla soup. Yuuuuukkkkkkkyyyy. I had two bites. Tossed it and went to Pot Belly's for a Meatball on wheat sandwich.

This didn't mean I was giving up on my plan to eat cleaner.

I just have to be smarter on the lunch I take to work.

I like to drizzle a little olive oil on them, and then sprinkle some fresh cracked black pepper, sea salt, and rosemary on my new potatoes (or you can use small red potatoes). Sometimes I'll also add some garlic--either powder, minced, or whole cloves. I usually wrap this all up in foil and put it on the grill until the potatoes are fork tender, but it would also work in the oven.

The Pioneer Woman just posted this recipe tonight that looks good. And it's basically the same as Bryan's but with some smashing/crisping involved.

As for lunch foods, I have a lot of easy recipes for good lunches on my blog. I miss the days when I had a kitchen at my disposal and could cook my own lunch instead of take out every day...

Kevin, you got it all wrong. We run, so that we CAN eat Pei Wei, BBQ and TexMex!! It's all about portion control, of course I have no portion control!!

Thanks for linking to me! I hear ya on the eating out. You have it harder than I do because of all of the great restaurants in the DFW area. Whenever I visit Dallas I think I eat out every day. (And gain 5 pounds)

You will have better training though, if you ramp up the nutrition! I recover a lot better from workouts if I've been eating good. Good luck!

Another great potato recipe- slice them up rather thin (this will only work with portions for up to 4 people), then add salt and sage (or rosemary) to the pan with a bunch of olive oil and fry them until they are crispy. Yum. Very yum.

Actually, I got this recipe from Rozanne Gold's Cooking 1-2-3. It's the first cookbook I've considered buying in a long time, but all the recipes have 3 ingredients or less, and they are really imaginative and great-tasting. I borrowed it from the library last month and it ended up being overdue. If you're looking to incorporate more home cooking, you might peruse it...

I like sweet potatoes, peeled and dusted with a little cumin...sounds weird, but is really good! Bake at 350 for about 30 minutes...enjoy!

seriously, i know the whole thing about eating clean. i did a great job of that when i was training for san diego last year. gonna have to start doing it again.

Yo! What's the deal with Chipotle? Grilled Chicken burrito w/ rice and black beans - it's all carbs and protein!

I agree w/ everything else though ... but damn, BBQ too? :-)
